Sausage Rolls
A traditional English sausage roll recipe is one of the most beloved savory bakes in British cuisine. With golden, flaky puff pastry wrapped around seasoned sausage meat, these rolls are simple, hearty, and endlessly satisfying.
Perfect as a snack, party food, or picnic favorite, classic sausage rolls have been enjoyed in England for generations. Their crisp pastry shell and flavorful filling make them a versatile treat that’s just as welcome at a casual lunch as on a holiday spread. Easy to bake at home, authentic English sausage rolls bring the comforting taste of tradition straight to your kitchen.
This is my go to recipe for sausage rolls which I have been using for many years, but recently, just for fun, I made a Gregg's copycat sausage roll to see if they tasted any better, read the details here Gregg's Copycat Sausage Roll Recipe
This recipe will make approx 4 x 10-12 inch rolls, then before baking you have the option of deciding how big to make them, cut with a sharp knife, you could have:
- 16 x 3 inch
- 12 x 4 inch
- 8 x 6 inch

Ingredients
Meat Filling
| Minced or ground pork (85/15) | 1 lb |
| Bread crumbs | 4 oz |
| Salt | 1/4 tsp |
| Sage | 1/2 tsp |
| Onion powder | 1/2 tsp |
| Garlic Powder | 1/2 tsp |
Pastry
You can try and make you own puff pastry but it's really not worth the effort, factory made puff pastry is usually very good and certaily good enough for sausage rolls. Usually 1 pack (approx 14 oz) is enough for the meat filling in this recipe.
Method
- Add all the ingredients into a bowl and hand mix so that everything is combined well.
- Split the filling up into 4 equal parts and hand roll out into a roll about 10 inch's long. Sometimes the filling comes quite sticky so you should use a little flour on the table and your hands, this helps a lot.
- The puff pastry needs to be taken out of the freezer at the right time and allowed to warm up sufficient so that it can be unrolled but avoid letting it get to room temp or it will become too soft and unworkable. I cut my sheet into 4 pieces 10 x 3.5 inchs.
- Use the filling rolls and form a 10 inch sausage roll, I then cut each one into 3
Transfer to a lined baking sheet and using a sharp knife make diagonal slits across the top. - Egg wash using just the egg yolk, 2 tsp of water and a pince of salt, beat very well with a fork. Do not apply too much egg wash or it will burn in the oven.
- Preheat the oven to 400 F and bake for about 20-25 minutes or golden brown, watch carefully because at this temperature it is very easy to over bake.
- They are very hot out of the oven so you will need to wait at least 10 minutes before trying to eat them.
